Steamed Pumpkin Cake

Ingredients :

450 gr peeled pumpkin, cut into 1-inch thick chunks
1 cup rice flour
quarter cup tapioca flour
1 cup sugar
100 gr grated coconut
half tsp salt
1 and quarter cups coconut milk



How To Make :

1. Steam the pumpkin chunks until soft, then mash thoroughly. Blend pumpkin with rice and tapioca flour thoroughly, then add sugar, 50 grams grated coconut, and quarter tsp salt and mix, adding the coconut milk a little at a time. Continue stirring until sugar dissolves completely.

2. Pour the mixture into 8 x 8 inch baking pan and sprinkle with the remaining grated coconut mixed with quarter tsp salt. When the water in the steamer is boiling, put the pan in the steamer tray and steam for 30 minutes. Then open the steamer, remove the pan, allow to cool, and cut the cake into pieces of desires size.
