Panzanella

Ingredients :

quarter loaf white sourdough bread
2 vine-ripened tomatoes, cut into wedges
1 punnet yellow cherry tomatoes, cut in half
1 punnet red cherry tomatoes, cut in half
half red onion, cut into 1 cm dice
1 large cucumber, seeded and cut into 1 cm dice
5-6 basil leaves, torn
40 ml red wine vinegar
80 ml extra virgin olive oil
salt and pepper



How To Make :

1. Preheat the oven to 160 Celcius Degree.

2. Tear the sourdough into bite-sized chunks, place on a baking tray and bake for about 10 minutes until golden and crunchy. Remove from the oven and allow to cool.

3. Combine the tomatoes, onion, cucumber and basil in a large bowl. Whisk together the red wine vinegar and olive oil, pour over the salad and toss gently to coat. Season with salt and pepper. Add the cooled sourdough pieces, toss again and serve.
