Golden Prawn Puffs

Ingredients :

4 medium red chilies
350 gr raw prawn meat
half cup fresh coriander leaves
2 egg whites
1 tbsp finely grated fresh ginger
2 cloves garlic. chopped
1 tsp fish sauce
one per three cup of rice flour or cornflour
half cup oil, for frying
chili sauce, for serving




How To Make :

1. Finely chop the red chilies. Place the chilies in a food processor with the prawn meat, coriander leaves, egg whites, ginger, garlic, and fish sauce.

2. Process all the ingredients for 10 seconds or until the mixture is well combined. Transfer the mixture to a bowl and stir in the flour. Refrigerate the mixture for at least 30 minutes or until you are ready o fry the puffs.

3. Heat the oil in a heavy based frying pan. Drop rounded teaspoonful of the mixture very gently into the hot oil and cook for 2 minutes, carefully turning them with tongs until golden brown on all sides. Drain the puffs on paper towels and serve immediately with chili sauce.
