Coconut Egg Custard with Pumpkin

Ingredients :

2 small pumpkins
3 pandanus leaves
three-quarter cup palm sugar
1 and half cups beaten egg
1 and half cup coconut milk

How To Make :

1. With a small, sharp pointed knife, cut 5-6 pointed star-shaped opening around the stems of the pumpkins. Lift the stems and remove seeds and membrane from the insides.

2. In a mixing bowl, squash by the hand the pandanus leaves together with sugar and egg for about 10 minutes, then continue squashing, adding in the coconut milk. Strain through cheesecloth into the pumpkins, filling them up to 1 inch below the top.

3. Place each pumpkin in a bowl of the same size, and steam over vigorously boiling water until cooked (about 45 minutes). Remove to cool, then cut into wedges, and serve.

Peach Kuchen

Ingredients :

350 gr self-rising flour
225 gr caster sugar
175 gr unsalted butter, softened
2 eggs
120 ml milk
6 large peeled peaches, sliced or 450 gr plums or cherries, pitted
115 gr soft brown sugar
half tsp ground cinnamon
sour cream or creme fraiche, to serve

Hot Chicken Curry

30 ml corn oil
quarter tsp fenugreek seeds
quarter tsp onion seeds
2 onions, chopped
half tsp garlic pulp
half tsp ginger pulp
1 tsp ground coriander
1 tsp chili powder
1 tsp salt
400 gr canned tomatoes
2 tbsp lemon juice
350 gr skinned, boned and cubed chicken
2 tbsp chopped coriander (cilantro)
3 fresh green chilies, chopped
half red bell pepper, cut into chunks
half green bell pepper, cut into chunks
fresh coriander sprigs

Spicy Vegetable Soup

Ingredients :

half red onion
175 gr each, turnip, sweet potato, and pumpkin
2 tbsp butter or margarine
1 tsp dried marjoram
half tsp ground ginger
quarter tsp ground cinnamon
1 tbsp chopped spring onion
4 cups well-flavored vegetable stock
2 tbsp flaked (sliced almonds)
1 fresh chili, seeded and chopped
1 tsp sugar
25 gr creamed coconut
salt and ground blackpepper
chopped coriander, to garnish

Chocolate Vino Cotto Pavlova

Ingredients :

6 free-range egg whites, at room temperature
1 and half caster sugar
quarter cup Dutch-processed cocoa powder
1 tbsp vino cotto, plus extra for drizzling
40 gr finely grated dark couverture chocolate (70% cocoa solids), plus extra coarsely grated (optional), to serve
extra virgin olive oil, for brushing
5-6 figs, halved, or 300 gr raspberries
300 ml creme fraiche or double cream

Seafood Soup With Chili and Basil

8 raw king prawns
8 small black mussels in shells
200 gr white fish fillet
3 small squids hoods
1 tbsp oil
half tsp ground turmeric
3 stems lemon grass (white part only), bruised
2 cm piece fresh ginger, thinly sliced
