Batter-Coated Water Chestnuts in Syrup and Coconut Milk

Ingredients :

1 cup diced boiled water chestnuts (300 gr, or 40 fresh water chestnuts)
half cup tapioca flour
150 gr sugar
three-quarter cup water (for syrup)
three-quarter cup coconut milk
ice
red food coloring



How To Make :

1. Place red food coloring in a little water and soak the water chestnut until colored. Remove and place in the flour so the pieces become well coated. Then place these mock "pomegranate seeds" in a strainer to allow excess flour to fall away.

2. Heat 5 cups of water to a boil. Stir in the pomegranate seeds to cook through for 3 minutes. Remove and place in cold water. Again remove and wrap in thin white cloth.

3. Boil the sugar and water to make syrup, allow to cool, then add the coconut milk.

4. When serving, place the mock pomegranate seed in a serving bowl, then add syrup and ice.
