Lemon and Blueberry Muffins

Ingredients :

185 gr plain flour
160 gr stone-ground wholemeal plain flour
3 tsp baking powder
half tsp bicarbonate of soda
half tsp salt
300 gr fresh or frozen blueberries
2 eggs
110 gr caster sugar
125 ml light olive oil
125 milk
60 ml sour cream
very finely chopped zest and juice of 1 lemon
very finely chopped zest and juice of 1 orange
demerara sugar (optional), for sprinkling

Prawn Salad with Coconut Milk Dressing

Mango Ice Cream

Ingredients :

400 gr packet frozen mango
half cup caster sugar
quarter cup mango or apricot nectar
300 ml cream
mango slices and fresh mint springs, to garnish

How To Make :

1, Defrost the mango until it is soft enough to mash but still icy. Place the mango in a medium bowl and add the sugar and nectar. Stir for 1-2 minutes or until the sugar has dissolved.

2. Beat the cream in a small bowl until stiff peaks form. Gently fold the cream through the mango mixture.

3. Spoon the mixture into a lamington tray ; cover and freeze for about 90 minutes or until half frozen. Quickly spoon the mixture into a food processor bowl. Process for 30 seconds or until smooth. Return to the tray or plastic container; cover and freeze completely. Remove the ice cream from the freezer for 15 minutes before serving, to allow it to soften a little. Serve the ice cream in scoops with mango slices and sprigs of mint.

Tips :
Storage Time : Freeze the ice cream for at least eight hours before serving; can be kept frozen up to 3 weeks.
Variation : When available, use fresh mangoes. Puree the flesh of 3-4 large ones in a food processor.

Caramel Dumplings

2 cups or 300 gr plain flour

half cup milk
1 tsp vanilla extract

Caramel Sauce
40 gr butter
1 and half cups or 265 gr brown sugar

Bok Choy with Oyster Sauce

Ingredients :

1 bunch bok choy, cores removed
1 tbsp vegetable oil
2 tbsp oyster sauce
dash of sesame oil
1 tbsp peanut oil

How To Make :

1. Separate bok choy leaves and wash thoroughly.

2. Fill a large saucepan with water and bring to the boil. Stir in vegetable oil, add bok choy and simmer until bok choy is bright green and tender - this should take about 1 minute. Using tongs, immediately remove bok choy from water and place on a platter. Drizzle with oyster sauce and sesame oil.

3. Heat peanut oil in a mall frying pan until moderately hot and carefully pour over bok choy. Serve immediately.

Ingredients :

300 gr rice
3 cups coconut milk

How To Make :

1. Wash the rice once and place in a colander to drain.

2. In a mixing bowl, combine coconut milk with sugar and salt, and stir to dissolve. Strain into a pot and add the rice. Boil or steam until the rice is done (about 30 minutes). Serve with Papaya Salad.

Coconut Egg Custard with Pumpkin

Ingredients :

2 small pumpkins
3 pandanus leaves
three-quarter cup palm sugar
1 and half cups beaten egg
1 and half cup coconut milk

How To Make :

1. With a small, sharp pointed knife, cut 5-6 pointed star-shaped opening around the stems of the pumpkins. Lift the stems and remove seeds and membrane from the insides.

2. In a mixing bowl, squash by the hand the pandanus leaves together with sugar and egg for about 10 minutes, then continue squashing, adding in the coconut milk. Strain through cheesecloth into the pumpkins, filling them up to 1 inch below the top.

3. Place each pumpkin in a bowl of the same size, and steam over vigorously boiling water until cooked (about 45 minutes). Remove to cool, then cut into wedges, and serve.
